How to make a Derby

1. Add 2 oz Gin, 2 Fresh Mint Leaves, 2 dashes Peach Bitters to a mixing glass.
2. Fill with ice and stir for 20–30 seconds, until well chilled and properly diluted.
3. Strain into a chilled coupe glass.
4. Garnish with mint sprig.
